I just bought a whole pile of chicken mince because it was cheap at Pak n Save. Does anyone have a great recipe I can try? The only mince I ever buy is beef and I tend to stick to lasagne, nachos...and neither of those very often so I need some inspiration please...

I love making my own chicken meatballs with the mince. You can add just about anything you like and very yummy with sweet and sour sauce.
Sorry don't know if that is much inspiration for you though

I made patties with chicken mince and put them in burgers.
Otherwise meatballs, meatloaf (not sure how that would work) Fry it and put it in a pasta bake, pasta....
ETA taco's / wraps
yum getting hungry now

I love making chinese style dumplings with chicken mince. If you dont have wonton wrappers (making your own is fine, but it takes aaaaages), roll the balls in rice and then steam them. :) yum yum yum espec with lots of dipping sauces! Here is the recipe I use most often, though you can easily change what you put in them :)
Rice Dumplings (from a tupperware cookbook I got free)
Ingred:
1/2 cup uncooked rice
250g chicken mince
1/2 cup finely chopped mushrooms
2 tsp cornflour
1/2 cup spring onion
1 TB soy sauce
1 tsp minced or grated ginger
1/2 tsp sesame oil
1. Rinse the rice, drain thoroughly and set aside
2. Add the rest of the ingredients to a bowl and mix until well combined
3. Take a TB of mixture and roll into a ball. Repeat with remaining mixture.
4. Roll the balls in the rice until covered
5. Fill wok (or saucepan) with 1-2 cm of water and place in steamer.
6. Place in the rice balls and steam for 15-20 mins over medium heat or until the rice is tender
7. Serve hot with your favourite dipping sauce.
