Any muffin mixture would do, yeah? You just use normal muffin recipe and put it in smaller tray... cooking time will be a whole lot shorter.

Banana?

Plain cupcake?

Fruit salad?

Blueberry?

i just use a normal muffin mix, i usually make choc choc chip with white choc icing and sprinkles ontop. tash doesnt get the chance to eat many though

Normal muffin mix, you need a 24 mini muffin tray, or like I have, 2 trays of 12.

Carrot and pineapple is great, I have a recipe here I can get for you if you want.. like mini carrot cakes.

ABC muffins - apples, bananas, choc chips (or sultanas).

Apple with cinnamon and brown sugar sprinkled on top.

I am known as the muffin queen lmao.. as I always make them, so easy to make! I don't make big ones anymore.

Oh yes - meant to say - YOU! Put money and muffins in my bag the other night. ARGH.

Must plan a dinner at ours one night.

And Han is very thankful for little muffins, making her creche lunch so much more interesting (or just interesting... she gets the same boring things every day atm)

I made mini plain cupcakes and they're great! So easy (Edmonds recipe) I iced them with blue icing and sprinkles for my friends baby shower and they went down really, really well!

mmmm raspberry & white choc or raspberry & cream cheese YUMO
I make my muffins with yoghurt & oil rather than butter- makes for a much lighter texture
2C Flour
1/2C Sugar
1Egg
1tsp vanilla essence
1/2C Yoghurt
1/2C Oil
1C Milk
1/2tsp b.powder
Mix together all the dry ingredient, then add wet ingredients. Add whatever you like to wet ingredient to flavour. Cook for 20mins on 180 degrees.
The secret to muffins is not to over mix or overcook, otherwise they go hardish.

Happy Muffin munching (carrot & pineapple is yum & healthy too)
ETA: the vanilla essence lol

Mini Carrot Cakes These are good with or without the icing

(this recipe works well in a 6, 12 or 24 (or 2 lots of 12 for mini muffins) tray tin.

1/2 cup vegetable oil
3 eggs, beaten lightly
1 1/2 cups self raising flour (I use 1.5 teaspoons b.powder to 1.5 cups plain flour)
3/4 cup caster sugar (can use normal, makes no difference
1/2 tsp cinnamon
2 cups grated carrot
3/4 cup drained crushed pineapple

Preheat oven to 180.
Mix oil, eggs, flour, sugar and cinnamon in large bowl with a wooden spoon until combined. Stir in carrot and pineapple.
Pour mix into prepared tins, bake for 35 mins (if using large tins).
I find they usually take around 15 mins for mini muffins, but check them to feel if they are ready, sometimes it takes a bit longer.

Stand muffins in their tins for 5 mins, then remove onto rack.

Cream Cheese Icing

50g butter, softened
1/2 cup cream cheese (half the container)
2 and 1/2 cups icing sugar

Soften (not melt) cream cheese and butter together and then beat. Add icing sugar and stir in.
