There seems to be a lot more GF mums on here lately, yay! Can I pick your brains for more breakfast and lunch ideas?

Breakfast
Fresh fruit and yoghurt
Nature's Path cornflakes
Corn puffs, drizzle them with a bit of honey
Toast

Lunch
Toast
Scrambled eggs
Salad, with/without tuna/cheese
Leftovers from dinner
Apple crumble

Your breakfast options are similar to mine although with winter coming in you might want to try a rice porridge for a hot alternative.

Lunch I often have:

  • soup and toast
  • Baked beans
  • Uncle bens pilau rice and cooked veges
  • baked potatos
  • scalloped potatos
  • frittata
  • sandwiches (made with yummy soft white basco GF bread)
  • pizza
  • leftovers

Mine are pretty similar to both of you so I don't really have any brilliant ideas!

For breakfast I either have toast or fruit and yoghurt.
For work lunches I have sushi, sushi and more sushi :), otherwise muesli and yoghurt or corn cruskits (which i love) with tuna. On the weekend I normally cook something like an omelette.

I thought baked beans had gluten in them?

I've been a coeliac for 5 years now
brekkie -
healtheries simple cereal and yoghurt
fruit
egg on toast (I like the verdini)
baked beans on toast
I've tried rice porridge but can't get past the smell of rice

lunch -
sammy
leftovers
rice noddles and veg
those microwave rice pouches
baked spud with toppings

Hi GFers,

Do any of you know of a good pizza base recipe that works well? I have used mixes in the past that you add egg and oil to that have tasted horrible. I buy GF ready made bases now but I would like to make my own as long as they don't taste like dirt My DH makes amazing gluten filled bases and I always get jealous.

I make mine from the healtheries bread mix - follow the instructions on the packet (and throw in an egg for a bit of colour as its really white) One bag of mix should make 4 huge pizzas.

you need to make it quite sticky or it cooks up kinda solid - which can be a pain when it comes to making the base. I don't bother with a rolling pin and I cover my hands and the baking tray with a bit of oil and just press it out into a circle.

when perfected it comes out just as lovely as the regular toxic ones.

Great thanks, sounds good. I'll give it a go. I made some yum olive and cheese bread with that bread mix awhile ago.
