I needed a recipe for a chocolate cake as I had the honour of baking the birthdy cake for my grandmothers birthday. I wanted to make a really nice chocolate cake that was easy, foolproof and didn't have a lot of outrageous ingredients or cooking chocolate included.

This cake was absolutely delicious and the middle of it looked and tasted like a store bought cake (the outside looked like I decorated it blindfolded with one hand)

2 Cups of flour
3/4 Cup of cocoa powder
2 Cups of sugar
1 tsp of baking powder
2 tsp of baking soda
1 tsp salt

1 Cup of coffee (i used 2-3 teaspoons in a cup of boiling water and chucked that in)
1 Cup of milk
1 Cup of oil (I used olive and the recipe said vegetable)
2 eggs
1 tsp of vanilla essence

Mix all the dry ingredients together, chuck in the oil, coffee, milk, eggs and vanilla, beat really well. I would even suggest using a blender

I baked it at about 180 degrees for 1.5 hours, but I have a gas oven that messes times up, so in a normal oven I would bake for about 45 minutes or until a skewer comes out clean

Mmmm cake. Everyone loved it too!

I'm not so good at baking, but thought I might give this a try - how big a cake tin will i need? Does it puff up alot?

I made this cake yesterday
When it had finally cooked through the outside was rather crispy and the inside was very rich! I was wondering what everyone else's cakes were like? I cooked it for 1hr 20mins in a regular oven 180oC (when the knife finally came out clean) and I actually think that might have been a bit too hot. Maybe it could have been a bit better cooked at 150oC for 2hrs or something? Also I did 2 and 2/3 teaspoons of coffee in the hot water and that was just a tad too strong!
Great cake though, Hubby loved it!

I only used 1 tsp of espresso coffee (not a huge fan) and it was just enough to bring the flavour of the chocolate out. I think I cooked mine roughly for an hour at about 160 degrees...I found 180 too hot (I checked it half way through and it was already cooked on top but runny inside, so I turned the oven down). And BTW, I sent the cake to DH's work for their morning tea, and someone is going to pay me to make another one for her daughters cake sale (evidently she can't bake!!)

Yummy - i just made this recipe but instead of making it into a cake, i made texas muffins and cooked them for about 20mins.

Once again i say yummy

sounds good may make it tomorrow what sort of flour does it matter
people i hate baking
i may just make into muffins to and did it taste okay with out the cofree as i don't have that and don't like it either

the muffins turned out great. But i have one question....

Why, oh why did you bump this thread??? I am on a diet and must not make these tomorrow. Must not make them even on the pretence of making them for DH.... I will be strong

...... but they are so delicious.

I used self raising and left out the baking soda/powder. If i had plain flour i would use both the powder and soda.

The coffee just enhances the chocolate flavour, you cant really taste the coffee.

If you are making it as muffins you could also top them with a creamy chocolate butter icing.... very naughty

thanks i've got self raising flour to so use that and not put in the baking soda or baking powder????

I've got one in the overn right now (cake that is). I hope it works it is a huge amount of mixture....maybe I should have used 2 tins!
