Does anyone have an Edmonds cookbook handy and do you mind posting the recipe for afghans? I really fancy some but don't have my Edmonds book here .....

Found this on google, its supposedly taken from the Edmonds cook book.

Afghan Biscuits

Ingredients:
200g (7 oz) butter
75g (3 oz) sugar
175g (6 oz) flour
25g (1 oz) cocoa powder
50g cornflakes (or crushed weetbix)

Instructions:
Soften butter
Add sugar and beat to a cream.
Add flour and cocoa
Add cornflakes last so as not to break them up too much.
Put spoonfuls on a greased oven tray and bake about 15 minutes at 180 oC (350 oF)
When cold, ice with chocolate icing and put walnuts on top.

Chocolate icing recipe:

Melt 1 dessertspoon butter; add 1 dessertspoon cocoa mixed with a little boiling water, add 1 cup of sifted icing sugar and a few drops of vanilla essence.

Here's the Edmonds one kiwisj which I've used without fail time and time again! Happy baking!

200g butter
1/2 c sugar
1 1/4 c plain flour
1/4 c cocoa
2 c cornflakes

NB: I use 1 1/4 t baking powder if using plain flour, and can substitute weetbix for cornflakes.

Cream butter and sugar until light and fluffy. Sift flour and cocoa. Stir into creamed mixture. Fold in cornflakes. Spoon mounds of mixture onto a greased oven tray, gently pressing together.

Bake at 180 degs C for 15 mins or until set.

When cold ice with chocolate icing and decorate with a walnut if desired.

Makes 30.
