I have an easy peasy one.
Basically line a dish with pastry ( I buy the ready rolled, or you can make your own flaky pastry). Slice up bacon and scatter through the bottom of the dish, 6 eggs broken over the top. It's nice to spear the eggs and swirl the yolks around too. A sprinkle of plum sauce or similar is always quite nice over the top if you have it. A handful of cheese and then cover with pastry top. Bake at 180-190 for 40-45 minutes.
Big hit in my house and very yummy

mmm sounds yum with the cheese sprinkled on top. I do the same as MumtoSam but have no cheese (shall try that next time) and I put in some vege. Last night we had one and I put corn and peas in was very yummy.

I quite often put broccoli and mixed vege in mine. Oh and salt and pepper. I love flaky pastry - nothing like making a huge mess when you tuck into it!

i put bacon and tomato only no veges in mine either. i sprinkle some smoked paprika over it and i beat my eggs lightly with a little bit of milk and pour that over, then put some cheese slices over the top... mmmm the meal guaranteed to be eaten by all in our house.
the other variation i use when i have no tomato is with creamed corn.

I make bacon and egg pir alot
I buy ready rolled pastry, it works best with savoury on the bottom and flaky on top but if you dont want to buy 2 sorts just use flaky.
I put pastry on the bottom of dish, add chopped bacon & onion. i then add a few whole eggs.
I also make egg mixture of eggs, milk, and chopped parsley. I also pour this over the pie, and add some more chopped bacon on top.
then put pastry on top and push down and fork the sides, also put a few holes on top. brush egg mixture over top and add some seasame seeds.
It takes a while too cook, normally at least 1 1/2 hrs.

i do the same with my eggs too sabrina, some whole, some mixed with milk...
mine only takes about half an hour to cook tho!

Mine only takes about half an hour too, I often put spinach in it and some times sweet chilli sauce.

I do ready rolled flaky pastry to line the dish. I take the rind off the bacon and lay that in on top of the pastry (I don't worry about chopping it up), if I have some frozen peas I pop those in too. Then in my big glass jug I whisk together 6-8 eggs, about a teaspoon of chicken stock, 2 tablespoons of plain flour, and 1/2 cup of milk. Pour this over the top, then seal with the remaining pastry.
The flour stabilises the egg and means it stays nice and high once the pie is out of the oven. Yummo!

Do you have to put pastry on the top or can you leave it open? I am really keen to make this tonight as I have eggs and bacon that needs using up - but I only have savoury short crust pastry - will that work?

Sorry SimSam been a bit hectic around here - finally got my wee boy home from the NICU!
To answer your questions - you could do it without the top cover, it would be more like a quiche though if you do, but would still work. And same for the short crust pastry. I say play around and see what works for you.
