I've been through all the posts so fairly sure I haven't missed any, but please feel free to add any as they come up!

The Best GF Chocolate Cake Recipe:

Serve warm with ice cream or whipped cream, or simply dusted with icing sugar. I flour the pan using cocoa powder so it won’t leave white marks on the cake and keeps it totally gluten free.

Ingredients
125g     dark chocolate, chopped
125g     butter
185g     (¾ cup) white sugar
60g     (½ cup) cocoa
3 eggs     beaten
1 tsp     vanilla essence

Preparation Method:
Preheat oven to 150⁰C. Great pan (20cm round cake pan) and dust with cocoa powder.
Melt the chocolate and butter together in the top of a double boiler or in a basin over just simmering water.
Remove from heat and stir in sugar, cocoa, eggs and vanilla essence. Pour into prepared pan.
Bake in preheated oven for 30 minutes.
Let cool in pan for 10 minutes then turn out onto a wire rack to cool completely.
Slices cam=n be reheated for 20-30 seconds in the microwave before serving

ooh, thanks for bumping up M2M - dairy-free is actually very easy once you've got your head around it (as is egg-free). Hey, and I lost heaps of weight while BFing on a dairy/egg-free diet

Awesome, I now have some great cake recipes to choose from for Campbell's 1st birthday party this Sunday!
Question: can you make icing without butter, and still have it taste nice?

Yep you can. I've made it with out the butter, cant tell the difference cause I've made chocolate icing.

Loving this cake I also leave out the vinegar & vanilla essence. Vinegar is a preserver which it doesn't need. I've found best results for icing is making the arvo before.
