Just for Sarah Beth...

110g butter/marg
1 cup sugar
1 egg
pinch salt
1 teaspoon baking powder
1 1/2 c flour

Crea butter and sugar, add egg, then sifted dry ingredients. Put mixture in slice tin. Bake in moderate oven 20-25 mins.

Topping:
Boil 1 cup sugar, 1 cup water and 2 desertspoons gelatine. Boil for 8 minutes. Allow to cool to room temperature. Add a drop of red food colouring and 1 cup icing sugar. Beat until thick with electric beater.

Spread over cooled slice. Sprinkle with coconut if desired. Leave to sit overnight (or in fridge for a few hours) before cutting it so the marshmellow is well set.

Boo! Mine is not that nice this time So heres my tip - make sure your baking tin is a good size, I used a smallish one and the base is chewy on the outside and a little uncooked inside I think it tastes a little funny from the margarine (dairy free for Han) that I used too. But usually it is awesome. Yum

How do you get on with the egg in it, or don't you give it to Hannah? Do you know if it would work with Orgran instead?

I made it with Orgran. So not sure if it was that or the marg (Golden Harvest) that made it taste funny. When I creamed the marg and sugar, it smelt a bit funny, so I guess it was that. What did you use to substitute butter Emma?

I use Olivani, but I *think* Meadow Lea light is milk free too, not 100% sure but I think I used to buy it when money was tight coz the Olivani is so expensive.

Good to know the Orgran works ok in the slice!
