Hey all,

I am wanting muffin recipes, savoury and sweet.

I tend to just make chocolate or banana muffins using a cake recipe, but would like to make some others for rhiannon and kent as snacks.

would also prefer recipes without oil in them...but will take what i can get and will experiment with them and report back with any results.

I have 2 super awesome muffin recipie books, Marvellous Muffins and More marvellous muffins, both by Allisn Holst, both around $10. They are fantastic, you should invest...

I posted this recipe when I was pregnant, I am really hopeless about recipes so sorry this isn't an exact recipe but the 'rules' work for me - I used to have to make muffins EVERY day in one cafe I worked in - would drive me insane

I generally follow these rules....
For every cup of flour.....
1/2 cup sugar (I use castor)
1 egg
1 Heaped tsp Baking powder
Pinch of salt
About 2 Tablespoons oil
Milk to combine to that Muffiny Batter Consistancy
And then I bake at 190 until ready (skewer test if not sure)
Thats my basically how I make all my sweet muffins and add flavours to it, 2 cups of flour makes about 12 smallish muffins,
For lemon and raspberry, zest a lemon and add a good handful of frozen rasp (or fresh if you have them)
Triple choc Cheesecake...mmmmmm.... add about 2 good tablespoons cocoa, white choc buttons and milk or dark choc buttons to batter, mix cream cheese with some icing sugar and a wee bit of vanilla essence and when you put in tin fill half way up with muffin mix, put a tsp cream cheese mix in and top again with muffin mix. Hope thats not too confusing, I am hopeless at explaing how I make things!!!

Other sweet muffin ideas (that i make with this recipe)......
-Maple and walnut (although you do have to adjust slightly the sugar content)
-Banana/choc chip or Banana/maple (adjust sugar again)
-Blueberry and vanilla
-Berry and white chocolate
-Jaffa (orange/chocolate) - I used to put giant jaffas in the middle
-Lemon and ginger - good for winter
-orange and lemon
There were heaps more I used to make these were just a few examples

Also, FYI, new world have edmonds muffin and cake mixes on special ATM, $2.99 I think, so cheap as. The apple and sultana muffins are really really yummy, I add about another 1/2 cup of sultanas to them, and dust the top with brown sugar and cinnamon before baking. YUMMO

Ditto the Alison Holst muffin books, I have the muffins and slices one and recipes never fail. They have recipes with butter and/or oil.

Kaz I got this today from the Chelsea recipe club (email list):

Banana Choc Chip Muffins

Ingredients

2 eggs
2 ripe bananas, peeled and mashed
cup oil (plain vegetable, soya or canola oil)
1 cup low fat milk
cup Chelsea Soft Brown Sugar
2 cups flour
4 teaspoons baking powder
1 cup chocolate chips


Method

Preheat oven to 180C. Spray a tray of 12 muffin tins with non stick spray.

In a large bowl beat the eggs, mashed bananas, oil, milk and brown sugar together just lightly. Mix in the flour, baking powder and chocolate chips. Dont over mix the ingredients should be just gently stirred together to combine. Spoon into the prepared tins and bake for 15 - 18 minutes until puffed and golden brown. Cool for 2 minutes in the tins then gently twist and ease the muffins out to cool on a wire rack.

Tip: Always soak the muffin tins straight away as soon as youve removed the muffins. This means the tins clean up easily and you dont have to scrub at them and risk ruining their lovely shiny non stick surface.

Preparation time: 8 minutes
Cooking time: 18 - 20 minutes
Makes: 12
