anyone have any good recipes? i've got a whole bunch of homegrown beetroot here and no idea what to do with it!

Roast then toss through a salad with feta. DIVINE!

Beetroot hummus - this is the most heavenly thing...we have it in burgers, as a dip....basically anyway you would use normal hummus...

100g cooked beetroot, cubed (I roast mine, it seems to be nicer with it roasted)
Scant ˝ cup panko crumbs
˝ clove garlic, chopped
1 Tbsp tahini paste
˝ tsp cumin
1 Tbsp lemon juice
3 Tbsp extra virgin olive oil
Stick it all in a food processor and blitz until hummus consistency!

Oooh and this salad is really really yummy too....

Cut beetroot into 2cm batons and roast for 45 mins (covered), tossed in olive oil and carraway seeds. then roast for a further 25 mins uncovered. WHen straight out of oven put a couple of Tb of Balsamic through the beetroot. meanwhile finely slice red onion in lemon juice and leave for an hour. When beetroot is cool, layer in a bowl with drained onions, finely chopped fresh dates, pistachio nuts and finely chopped mint. Voila. Is from a Dish magazine.

or you can make beetroot chocolate brownies .... recipe

Works kind of like carrot in a carrot cake making them pretty moist and soooo yum! good way to sneak veges in lol

i ended up making these and they are pretty good!! very moist. i made mini muffins and froze them.
