I tried this recipe last week - it was delicious and these muffins will keep for a good week in an airtight container. Enjoy!

1 3/4 cups flour
1 tsp baking soda
1 cup sugar
1/4 cup cocoa

100g butter
1 egg
1 cup natural/greek yoghurt
1/2 cup milk
1 tsp vanilla essence

3/4 cup chocolate chips/drops/chunky chocolate (whatever takes your fancy)

Sift the dry ingredients into a large mixing bowl.

Melt the butter, add the remaining ingredients and mix until smooth.

Add the combined liquids to the dry ingredients and fold together until flour is dampened, but not smooth.

Divide the mixture evenly between 12 medium-sized muffin pans that have been well coated with Chef Mate non-stick spray.

Sprinkle with chocolate chips/drops/chocolate chunks if desired before baking.

Bake at 200 degrees celsius for 10-12 minutes or until centre springs back when pressed lightely. Leave to stand in the pans for about 3 minutes before removing and cooling on a wire rack.

Your muffins last a week!!! I'm lucky if they last 2 days in our house. The recipe I use is very similar, sometimes I use different flavoured yoghurt ie strawberry or raspberry.

This is my standard muffin recipe, but I vary it every time I make it!

Usually I leave out the cocoa, and add any tub of yoghurt I have in the fridge (small pottle). Then add dried fruit, sunflower seeds, etc.

If you don't have any yoghurt, you can add a banana instead. If it's not ripe enough to mash straight away, put it in the microwave for a few seconds then mash in a small bowl/cup. Tastes nice with stewed apple or pear, you can grate an apple if you don't have time to stew it.

oh and if you make the muffins without cocoa like I mentioned, sometimes adding a bit of brown sugar & cinnamon on top goes down well!

oh yeah, I only make mini muffins now (smaller for DD to eat). You need a 24 tray or two 12's.
