Carrot Cake
A fusion of recipes and usually made with the most casual of measurements!
Note: Not for those who are dieting or predisposed to heart disease
2 cups Flour
2 tsp Baking Powder
1 1/2 tsp Baking Soda
1 tsp Salt
2 1/2 tsp Cinnamon
4 Eggs
1/2 cup Butter
3/4 cup Oil
2 cups Sugar
2 3/4 cups Grated Carrot
225g tin of Crushed Pineapple (drained)
1 cup Walnuts (chopped)
Preheat oven to 165 degrees
Mix dry ingredients (up to cinnamon)
Mix wet and sugar
Add dry to wet
Add carrot, pineapple, and walnuts
Bake for 35-40 minutes (THEY LIE - Usually takes about twice that... check with skewer)
AND... la piece de resistance...
Cream Cheese Icing
125g Cream Cheese
2 1/2 tsp Butter
1 tsp Vanilla Essence
1 1/4 cup Icing Sugar
I usually end up using a whole pile more icing sugar, but that is probably because I soften the cream cheese and butter in the microwave first.
And yep, top with walnuts!
And then bring to my house so I can sample.

IT WAS DEVINE!!!!! Ask anyone who tasted it. There was 10 of us I think eating it and believe me the room was silent while we all indulged in the most devine carrot cake I have ever tasted.. Go Nikki

haha I don't make it very often otherwise my belly would be twice the size it already is... I sorta can't hold back from eating it for breakfast lunch and dinner

Nikki, hope you see this, thought I'd bump rather than PM you Any idea if this is freezable? Or how long it keeps if not? Just did a search for carrot cakes as one of my best friends is getting married this summer and wants carrot cake(s)...

YUM! So I finally made this cake this weekend for taste testing for the friend's wedding, and it was better than all the bought ones (so I'm now booked to make several for her wedding this summer!). Nekes I used a round 25cm diameter tin and it definitely filled it, wouldn't have wanted to use a smaller tin.

O.K. so I've made this cake twice in the last few weeks and it is DEVINE! Its truely evil and I find myself desperate to give it away to family and neighbours because otherwise I end up sitting on the couch looking at it thinking one more peice won't hurt

Just bumping this thread, I'm a terrible cook but have made the rich moist choc cake and choc chip cookies and have fooled my husband and his friends that I can cook lol, this recipe looks delicious! I love carrot cake
