I thought we could have a separate thread, so we can share our favourite recipes. I did do a search but nothing came up, so apologies if there is one out there.

Ok here's my first one:

Roast Pork with Apple Sauce Gravy

Pork shoulder (about 1.5kg), boned and rolled
fresh rosemary, sage and thyme (optional)
1 tsp dry mustard
1 tsp ground cumin
1 tsp salt
2-3 dark soy sauce
2 or 3 apples
1 Tbsp brown sugar
arrowroot or potato starch to thicken.

Turn the slow cooker on HIGH and coat the bowl with non stick spray.

If the roast is in an elasticated net sleeve, remove it. If it has been tied with string, leave the string in place. If not tied several pieces of string around it so the roast remains rolled. For a slight herby flavour, push a sprig of rosemary, sage and/or thyme between the layers of pork, and have more sprigs to put under the roast as it cooks.

Measure the mustard, cumin and salt into a saucer or shallow bowl, then add enough dark soy sauce to mix it to a paste. Massage this over all surfaces of the pork, then place it in the slow cooker, on its side with the smooth side up.

Remove the cores of the apples wtih an apple corer, then halve the apples (or quarter the unpeeled apples and cut away their cores). Push the pieces of apple down between the pork and the sides of the cooker bowl. Put on the lid and cook on HIGH for 4-5 hour, pushing the apples down in to the pan juices after 3 hours. Take the lid off for a short time only during this operation, so you don't lose too much heat. Do not take the lid off again until the meat has cooked for at least four hours altogether. If you have a meat thermometer, check that the temperature in the centre of the meat is about 77c or 170f. If necessary, cook longer. Turn down to low and leave for an hour or two longer. If this suits you.

When nearly ready to serve, take out the meat, mash the apples in to the liquid, and add the brown sugar. Stir in about a tablespoon of arrowroot or potato starch, mixed to a thin paste with a little cool water. Season to taste, and leave for about 15minutes to thicken. Serve with mashed potato or kumara and broccoli or green beans.

This was a huge hit in our house. For the apples, I just used what was in the fridge.

Cassies Casserole

500-700g sausages
2 medium onions
2 green apples
2 tbsp oil
2 tsp curry powder
1 or 2 cans (440g) baked beans or chilli beans
400g can chopped tomatoes in juice
2-3 young sage leaves, chopped (optional)
1-2 tbsp brown sugar (optional)
chopped parsley

Coat the slow cooker bowl with nonstick spray and turn it on to LOW. Leave the sausages as they are, or twist then cut them into shorter sausages, and arrange them in the slow cooker (I didn't bother).

Slice the onions and unpeeled apples into a nonstick frypan add the oil and the curry powder and brown the onion and apple over moderate heat until nicely coloured. Turn off heat and add the beans (and their sauce) and the can of tomatoes. Mix well adding chopped fresh sage leaves and brown sugar if you like.
Pour everything from the pan over the sausages in the slow cooker.

Put the lid and cook on LOW for 6-8hours. Everything should be cooked in six hours, but will be fine left for several more hours. Stir to mix everything, and sprinkle with chopped parsley before serving.

Really easy moroccan lamb

Throw diced lamb, couple of cans of morraccan watties tomatoes, masterfoods moroccan seasoning, tomato puree and mix. cook on low then about an hour or so before serving chuck in a can of chickpeas, serve with couscous and veges

Pork Chops with Peaches (thanks Alison Holst!)
Cook on Low for 8-9 hours

Ingredients:

2 tbsp flour
1/2 tsp paprika
1/2 tsp black pepper
1 tbsp olive or canola oil
6 large pork chops (about 1.2kg)
1 medium onion
1/4 cup lightly packed brown sugar
2 tbsp soy sauce
2 tbsp tomato sauce
2 tbsp wine vinegar
1 tsp dried thyme
1/2 tsp salt
1 x 400g can sliced peaches in juice
1 tbsp cornflour

Coat your slowcooker with non-stick spray and turn it on to HIGH to preheat.

Combine the flour, paprika and pepper in a shallow bowl. Heat the oil in a pan then dip each sicde of the chops in the flour mixture, shake off any excess, then fry for 2-3 mins a side, or until lightly browned.

Lift the chops from the pan and place them in the slowcooker (overlapping as necessary). Add the diced onion to the pan and cook for 2-3 minutes, until the onion begins to soften, then sprinkle over the pork chops in the cooker.

Combine the remaining ingredients (except cornflour) in a bowl and stir gently to combine, then pour this evenly over the pork and onions in the slowcooker.

Place the lid on the slowcooker, turn down to LOW and cook for 8-9 hours. About an hour before serving mix the cornflour with a tablespoon of cold water to make a paste. Stir this into the sauce and gently turn the chops.

Voila! Very very yummy
