Ok, so I am racking my brain going through my freezer trying to imagine what I can summon up for dinner tonight when I come across a large pack of forgotten chicken tenderloins (skinless, boneless etc) that are just crying out to be used.

Any ideas? Usually I whack them into a stirfry or something.

Thai green curry?  You need the paste (in a jar), a tin of coconut milk, bit of brown sugar and the veges for it - beans, carrots, onions and whatever else works for you.  The jar of curry paste does 3 big meals worth, too, so isn't pricey.

Mmm, my favourite way of dishing these badboys up is to crumb them.

I coat/marinade the tenders in natural yoghurt mixed with sweet-chilli sauce, then crumb them in breadcrumbs combined with dessicated coconut... Mmmmmmm. Then you just shallow fry them as you would with Shnitzel.

I serve it on rice that has raisins/sultanas and chopped celery in it (totally optional though) with a dollop of either the yoghurt or sweet-chilli sauce and with a big serving of salad OR whatever you fancy.

Yummmm, think I might do this for dinner tonight now, yummo!

We normally rough cut them and then coat them with Coat and Cook.
