I have so been missing my favourites so was very happy to find this, it doesn't have eggs so we can eat to our hearts content!!

(serves 6)

Ingredients:
250 ml strong (espresso) coffee
15 g cocoa powder
200 g chocolate
750 g mascarpone (room temperature)
1 vanilla pod
50 g caster sugar
170 g savoiardi biscuits (lady fingers)
cocoa powder for dusting

Prepare the espresso beforehand and dissolve the cocoa powder in it. Leave to cool.
Chop the chocolate so the peices are smaller than a pea.
Open the vanilla pod lengthwise and scrape out the beans. Combine with the mascarpone and sugar in a bowl and mix thoroughly and fold in the chocolate.
Dunk the ladyfingers in the coffee mix, one by one, and make up the first layer in your bowl. Dunk them quite quickly, making sure they soak up some of the liquid but do not become too wet.
Spoon half of the mascarpone mix on top, pushing it carefully through to fill the spaces in between the bisuits at the bottom.
Top with another layer of dunked ladyfingers and cover with the rest of the mascarpone.
Cover with cling film and cool in the fridge until ready to serve (1-6 hours).
Dust with the cocoa powder just before serving.

Yumm, might make some this week!
