My wee neice is allergic to eggs and wanted to make her a treat for her birthday. Found this recipe and it is brilliant. Made a trial batch last night and they are nearly all gone
Kids' egg and dairy-free marbled cupcakes.
(makes 12)
3 C self raising flour
1 3/4 C castor sugar
1 1/2 C water
2 tbs vegetable oil
1/2 C olivani spread
pink and blue food colouring (can leave this out)
Frosting
1 C Olivani
3 C icing sugar
1 tbs hot water
Place flour, sugar, water, oil and olivani in large bowl. Beat until mixture is combined and becomes slightly thicker.
Divide between bowls and tint one half pink and the other blue.
Put a spoon of both mixture into each muffin case. Run a skewer through the batter to get a marbled effect.
Cook in a 180 oven for about 25 mins. Stand in pan for 5 mins then turn out to cool.
To make frosting - beat Olivani in bowl until light and fluffy, gradually beat in icing sugar, add water and beat until smooth.
