This is a cross between a muesli bar and a cake - it is perfect for instant energy.

180g butter
1/4c honey
1 1/2c plain flour (I use healtheries gluten free baking mix)
1 1/2c rolled oats
1/2c sugar
3/4c diced dried apricots
3/4c raisins
3/4c dark chocolate drops

Put butter and honey in a saucepan and heat on low until melted, set aside to cool.

Mix sifted flour, oats, sugar, apricots, raisins and chocolate together. Pour melted butter and honey over the mixture and sitr until well combined and moist.

Spoon into a greased shallow baking tin. Bake for 25-30 mins (until brown) at 180 degrees celcius.

Place slice (in tin) on a wire rack until cool. When slice is completely cool place a chopping board over the baking tin and turn upside down. Tap gently on base so slice falls out onto the board.

Cut into pieces. Eat and enjoy.
