I just made my first ever Christmas (fruit) mince pies.... and they were totally gluten free!! I feel very proud of myself.
For anyone keen on the recipe (or to add recipes!!):
Pastry:
1/2 cup sweetened condensed milk (was supposed to be 120g cream cheese but I had a preggy brain moment - so either should work)
120g butter, softened
2 cups gluten free flour mix (or 1 cup rice flour, 1 cup potato flour and 1 tablespoon Xanthan gum)
Mix cream cheese and butter OR beat milk and butter until pale. Add flours and mix until well combined. Chill for 30 minutes before using.
Fruit mince (buy it ready-made, or:)
1 1/2 cups / 275g raisins
1 cup / 150g sultanas
1/4 cup dried apricots
2 Tbsp glace cherries
2 Tbsp almonds
1/2 cup mixed glazed peel
1/3 cup currants
1 apple, peeled, cored and finely chopped/coarsely peeled
1 tsp grated lemon rind
1 tsp grated orange rind
1 Tbsp lemon juice
1 cup brown sugar
1 tsp mixed spice
1/4 tsp ground nutmeg
60g brandy / orange juice
60g butter, melted
Mix well; store in airtight containers. Yield = 3 1/2 cups (enough for about 4x batches of a dozen mini pies (muffin tin size)).
I made my pies in a muffin tray with the pastry rolled to 3mm thickness and cooked them for about 20 minutes until just going golden at the edges. There is no need to grease the tin/tray. Leave in tin for a few minutes before turning out.
