I've made these too and they're great. I have swapped the raspberries for frozen boysenberries and also changed the types of chocolate - they all come out fab.

INGREDIENTS
300g plain flour
2tsp baking powder
150g golden castor sugar ( I use white cos it's all I had!!)
1 egg
1tsp vanilla essence
225ml milk
50g butter, melted
100g fresh raspberries
75g chopped white chocolate

METHOD
Preheat oven to 200C / 400F
Sift flour and baking powder into a large bowl and stir in the sugar.
Crack the egg into a separate bowl and whisk in the vanilla essence, milk and melted butter.
Stir the liquid into the dry ingredients with the raspberries and chocolate - taking care not to over mix.
Spoon the mixture into muffin tins (lined with parchment cases if required) and bake for approx 30 minutes - until well risen and just firm.
