Seeing as we're having Xmas here this year, I'm going to have a go at making Xmas pudding. Mum usually does it but she can't bring it over from Oz lol so I got out the trusty Edmonds book.

I have one question tho - I'm going to use brandy essence instead of brandy as I don't have alcohol in the house. Do I substitute the 1TB of brandy with 1TB brandy essence or do I use less essence? I have a feeling that the essence has a stronger flavour than the real stuff so you use less?

I'm pretty sure you substitute like for like (but please don't quote me).  The other option is most bottle store sell the cute teeny tiny bottles (like you get in hotel rooms) so you could buy a very small bottle just for Christmas recipes.

Id just use a teaspoon of brandy essence or you could substitute the brandy with orange juice
