We have a massive ham this year - a whole leg of about 10kg!
Does anyone have a yummy recipe of how to decorate etc to get ready for Christmas. I'm after something both festive & easy

This one was emailed to me from http://www.pork.co.nz - www.pork.co.nz  they use a hooded BBQ to cook the ham but you could do it in an oven.

Ingredients:

  • 100% New Zealand cooked half ham on the bone
  • 2 tablespoons whole cloves
  • 2 tablespoons dried cranberries
  • 1 cup cranberry sauce (or plum)
  • 2 tablespoons prepared mustard

    Cranberry Ham

    Method:

    1. Carefully run your fingers under the skin of the 100% New Zealand cooked on the bone ham and remove outside layer.
    2. Place on a rack in a deep oven tray.
    3. Using a sharp knife cut the ham fat layer into a diamond pattern and pierce with a whole clove in each corner
    4. Adhere cranberries to centre of diamonds using a toothpick.
    5. Mix together the sauce and mustard and pour/brush over the ham.
    6. Preheat BBQ to 200°C. Place ham in centre of preheated hooded BBQ and pour 2 cups of hot water into the oven tray. Allow BBQ to return to temprature.
    7. Turn off the inside burners and cook for 1 hour 45 minutes.

I'm using the glaze from my chrisco hamper, its 1/2 cup of orange marmalade, 1/4 cup of apple cider and 1 tsp of cinnamon.

remove skin, score the fat, decorate with cloves, and pineapple rings, brush with glaze, cook for however long the instructions say, brush with glaze 3-4 times during cooking.

I made my own marmalade this year, so will be extra special.

My Mum said just to peel the skin off leave some fat and score the fat and rub brown sugar into it. Otherwise heat brown sugar and orange juice mix together and you have a tasty easy glaze mmm yumm I can't wait

I just cut the excess fat off and during baking in the oven I glaze it
maple syrup and a bit of honey
towards the end of cooking I pour water into the pan and just use those juices to keep glazing it
