I just went through and looked for all the recipe threads with allergy-related recipes, in the allergy support section and this section, and thought it would be useful to have one thread which links to them all in one place. The Best GF Chocolate Cake Recipe:

Serve warm with ice cream or whipped cream, or simply dusted with icing sugar. I flour the pan using cocoa powder so it won’t leave white marks on the cake and keeps it totally gluten free.

Ingredients
125g     dark chocolate, chopped
125g     butter
185g     (¾ cup) white sugar
60g     (½ cup) cocoa
3 eggs     beaten
1 tsp     vanilla essence

Preparation Method:
Preheat oven to 150⁰C. Great pan (20cm round cake pan) and dust with cocoa powder.
Melt the chocolate and butter together in the top of a double boiler or in a basin over just simmering water.
Remove from heat and stir in sugar, cocoa, eggs and vanilla essence. Pour into prepared pan.
Bake in preheated oven for 30 minutes.
Let cool in pan for 10 minutes then turn out onto a wire rack to cool completely.
Slices cam=n be reheated for 20-30 seconds in the microwave before serving

ooh, thanks for bumping up M2M - dairy-free is actually very easy once you've got your head around it (as is egg-free). Hey, and I lost heaps of weight while BFing on a dairy/egg-free diet

Question: can you make icing without butter, and still have it taste nice?

Yep you can. I've made it with out the butter, cant tell the difference cause I've made chocolate icing.

http://www.allergy.org.nz/shop/recipes/brilliant+birthday+cakes.html - Loving this cake I also leave out the vinegar & vanilla essence. Vinegar is a preserver which it doesn't need. I've found best results for icing is making the arvo before.

Such good recipes here! I am trying gluten free diet to try and sort out DHs allergies and excema. He has had a really bad break out after I ate alot of bread/scones yesterday so I hope this will help.

Ds1 had a blood test to check iron levels the other day, they did a coeliacs screen as well the doctor wants to talk to us about possible coeliacs disease, so if he has it I will be needing these!

Just wondering if anyone has a mix of GF (well we are really wheat free) flours to make cakes with? Im wanting to make a WF, EF, DF banana cake for DDs birthday party in 3 weeks... Lots of recipies say GF flour mix.. or just use Rice flour (which from my limited experience doesnt taste so great....

Emmi, have you tried http://glutenfreegoddess.blogspot.com/2009/09/gluten-free-cake-cupcake-recipes.html - this site? They have loads of vegan, gluten-free cake recipes (and others) with different types of flours. Some of them have slightly crazy ingredients but I'm sure you could source them from somewhere?

I know Bin Inn in Lower Hutt sells a lot of unusual flours and mixes and things like that.

G/F flour mix can be anything you want. Usually on a rice flour base plus add in that gum stuff. Too lazy to get up & look what it is.

My suggest is make her a small muffin like cake or trial the mug cake with the alternative ingredients & then bake a normal cake for everyone else.

Thats a good idea Kel, but I am going to make a very hungry caterpillar cake... And I cant eat stuff either (still BFing) and I want to be able to eat what I want I havnt managed to get the right blend of flours, it ends up too grainy? I will keep playing though
