Im making this tonight and thought i would share because its sooooooooooo good (SIL made it for us!)

Ingredients
1 packet ginger nut biscuits
3tbspns butter
1 tin Highlander Caramel condensed milk
2 large or 3 small Bananas
200ml cream
1tbspn icing sugar
1/2 tspn Vanilla Essence
Flake for dusting

Directions
Crush ginger nuts in a food processor (or place them in a plastic bag, seal and crush with a rolling pin) -taking care not to make them too fine or they will turn to mush.
Melt butter in a saucepan or microwave.
Mix butter with biscuit crumbs.
Press into a round flan dish or tin.
Turn caramel out into a small bowl and stir until smooth.
Pour over biscuit base and spread evenly.
Place in fridge to chill for 20 mins.
Once chilled, slice bananas and arrange evenly over the top.
Place cream, icing sugar and vanilla in a bowl and beat until soft peaks form.
Spread over bananas.
Dust with Flake.
Place back in fridge until ready to serve.

I also put a pinch of instant coffee in with the cream yummy

Oh yum my sister-in-law makes this recipe and it is the BEST EVER and soooo easy to make....
