I tried baking my normal Christmas cake by substituting with gluten free self raising flour. I call it a Christmas cake but it really a sultana cake...

All the sultanas sunk to the bottom and it almost looks like two layers... I have googled a bit and can't really find a solution.

Any ideas??

I read something about putting them in at the end of the mixing? I can't really recall. Or maybe as you put them in the pan?

I would suggest finding a recipe that's natually gluten free, e.g. using no flour at all like a traditional fruit cake, or a recipe that names specifically the type of substitute gluten free flour to use or a naturally gluten free flour (like almond). Substituting in a complicated recipe can get really messy so adapting recipes from 'normal' to gluten free sometimes isn't worth the hassle.

I had read not to substitute and use a proven recipe but this cake usually SOOOOO yummy I didn't want to miss out this year. I guess I'll bake a normal one (or five!) for everyone else to enjoy and hope my BFing son has outgrown his wheat intolerance by next Xmas so we can all enjoy it then!
