Topic: Quick lunch ideas for mums Posted: 29 November 2005 at 1:11pm |
My lunch today:
2 Cholestoral (sp?) free hashbrowns - pop in toaster for 5 mins - two times on my toaster. Served with pesto spread on hash browns, then tomato and grated cheese (salt and pepper on top). Yummy and easy!
Also really nice with spaghetti and cheese topping - bub likes too.
I sometimes make a spinach and feta omlette for Ella and I - or any kind of omlette.
What are some quick and easy lunch ideas you guys have?
Kat

Mine is more a brunch as I find I miss brekkie and never have time for lunch!!
Bagels!! I cut them in half, toast them then put on Hummus, Avocado, Tomato, bacon (fat removed and cooked on baking paper) and then some pepper!! Soooo yummm and takes about 5 mins all up
Also Salami and Cream cheese sammies are yummy!! - Thought they were real odd when my friend suggested them but I have them all the time now!
I have just found Arna with a packet of thsoe mini hundreds and thousand biscuits (the resealable ones and ummm they are all gone and was a new bag this morning...) - at David !! Healthy lunch for her!! (NOT!!)

LOL Lena, Maya loves those hundreds and thousands bickies too. She can eat a whole packet by herself in about 2 days, so I don't buy them too often...
I have the same thing for lunch every day - french bread from the bakery and I put hummus, cheese, lettuce or baby spinach, tomato and capsicum, and sometimes ham.

I have the same thing for lunch most days too! Wholemeal bread toasted with tomato on top. And a banana on the side. Thrilling

today was a pot of chocolate yoghurt with my son, and half a banana... then this arvo we had strawberries and cheese sammies after the supermarket. that all sounds way too healthy for me too.

Today Kiya and I had toasted cheese muffin splits with cream cheese and tomato on them. Kiya enjoyed them so much she ate too many, and had a sore tummy for a few minutes!

Not a lunch idea strictly, but last night I made gorgeous fruit skewers for dessert with honeydew melon, pineapple, mango, strawberry and grapes on them, and a marshmallow on one end. I used to make them years ago, but lately have just been making plain old fruit salad, so when I saw the skewers in the latest Little Treasures magazine it reminded me.
And Maya scoffed about 5 of them!

Maya had 2 little friends here, and they were seriously soooo popular! I cut the skewers in half so they were smaller, and the kids just scoffed the lot. Was thinking of putting some CalciYum chocolate dairy food in little dipping bowls for them too, but forgot all about it.
