Soup:
1 carrots
1 large onion
1 decent sized zuchinni/courgette or 2 small ones
1 clove garlic chopped
1 chicken or vegetable oxo cube
1 tin chopped tomatoes
˝ tin of water
Oregano & Marjoram (or mixed herbs if you dont have these)
salt & pepper to taste
Cut veges up finely - about 5mm cubes.
Put in a large pot
Add tomatoes, water & chicken stock.
Bring to boil and simmer for an hour.
Stir often while cooking

I always double this as i cant stop eating it once i make it. I love the fact that the only real bad thing in the recipe is the stock cube but it is crucial for taste (in my opinion)
I thought id share seeing as we are coming into summer so all the ingredients are relatively cheap now, or about to start growing in out gardens.
