Just wondering if anyone has a mix of GF (well we are really wheat free) flours to make cakes with? Im wanting to make a WF, EF, DF banana cake for DDs birthday party in 3 weeks... Lots of recipies say GF flour mix.. or just use Rice flour (which from my limited experience doesnt taste so great....

Emmi, have you tried this site? They have loads of vegan, gluten-free cake recipes (and others) with different types of flours. Some of them have slightly crazy ingredients but I'm sure you could source them from somewhere?
I know Bin Inn in Lower Hutt sells a lot of unusual flours and mixes and things like that.

G/F flour mix can be anything you want. Usually on a rice flour base plus add in that gum stuff. Too lazy to get up & look what it is.
My suggest is make her a small muffin like cake or trial the mug cake with the alternative ingredients & then bake a normal cake for everyone else.

Thats a good idea Kel, but I am going to make a very hungry caterpillar cake... And I cant eat stuff either (still BFing) and I want to be able to eat what I want I havnt managed to get the right blend of flours, it ends up too grainy? I will keep playing though

How did the cake go Emmi? We made a GF EF DF hungry caterpillar cake for DSs 1st bday too late for you now, but we used the love cake and it tasted sooooo good!
