Brilliant breakfast
My children are loving the oaty breakfast I create for them in 5 minutes each night. They literally wake and head straight for the fridge to fill up on this healthy simple creation. If you get into the habit of doing this each evening then you will never have the morning "what's for breakfast' blues again. Make sure you soak the oats overnight though so they are lovely and soft by breakfast time.
Feeds 2-4 (depending on the hunger!)
Ingredients
- 2 cups oats (steel cut are best)
- 2.5 cups whole milk (or dairy-free option such as almond or coconut)
- 1 Tbs maple syrup (or honey)
- 1 tsp vanilla extract
- 1/2 cup chia seeds
Pile all the ingredients into a glass bowl and stir to combine. Cover and place in the fridge overnight.
Serving Options
Top with sliced banana and a dollop of Greek yoghurt
Stir through grated apple and top with cinnamon and chopped almonds
Stir through berries and top with coconut yoghurt
Add in toasted coconut flakes and pistachios along with a few dried cranberries.
