Ingredients:
- 500g beef stew meat, diced into small pieces
- 1 tablespoon olive oil
- 1 onion, finely chopped
- 2 garlic cloves, minced
- 200g button mushrooms, sliced
- 2 tablespoons all-purpose flour
- 1 cup beef broth
- 1 tablespoon tomato paste
- 1 tablespoon Worcestershire sauce
- 1 teaspoon dried thyme
- Salt and pepper to taste
- 2 sheets store-bought puff pastry
- 1 egg, beaten (for egg wash)
Instructions:
- In a large pan, heat olive oil over medium heat. Add diced beef and cook until browned on all sides. Remove the beef from the pan and set it aside.
- In the same pan, add chopped onions and minced garlic. Sauté until the onions become translucent.
- Add sliced mushrooms to the pan and cook until they are tender and slightly browned.
- Return the cooked beef to the pan. Sprinkle flour over the ingredients and stir well to coat everything evenly.
- Pour in the beef broth, tomato paste, Worcestershire sauce, dried thyme, salt, and pepper. Stir to combine all the flavors and bring the mixture to a simmer. Let it cook for about 15-20 minutes or until the beef is tender and the sauce has thickened.
- Preheat your oven to 200°C (390°F).
- Roll out the puff pastry sheets on a floured surface and cut them into circles or squares, depending on your preferred pie size.
- Grease a muffin tin and line each cup with a puff pastry circle or square, pressing gently to fit the shape.
- Spoon the beef and mushroom filling into each pastry-lined cup, filling it almost to the top.
- Cover each pie with another puff pastry circle or square and press the edges to seal the pies. You can use a fork to create a decorative edge.
- Brush the top of each pie with the beaten egg for a golden finish.
- Make a small slit on the top of each pie to allow steam to escape during baking.
- Bake the pies in the preheated oven for 20-25 minutes or until the pastry turns golden and flaky.
- Remove the pies from the oven and let them cool slightly before serving.
