Yummy vegetable bake
Sometimes it's hard to ensure kids get enough nutrients during a busy day so when we haven't had much fresh food during the day I can always get away with more than the quota of veges with this recipe:
Any or all of the following veges:
Carrot
Kumara
Potato
Beetroot
Marrow
Yam
Parsnip
Broccoli Stalk
Onion
Chop into large pea size proportions and scatter in a roasting dish
In a bowl mix 1 tsp of oyster sauce, 1 Tsp oil, 3 Tbsp of honey. Heat if necessary to ensure honey is runny and then drizzle over all the veges. Roast for 20-30 mins on med-high or until all are cooked. Rotate the veges periodically to ensure they get coated and cook for longer if wanting a caramelised texture.
This dish is colourful enough to serve on it's own or as a side to some Lamb/Beef Chips. Toddlers love picking the veges up whilst older ones enjoy trying out their cutlery skills on the bite size pieces…
