Berry and apple crepe parcels
Apple and berry crêpes
The trick to a good crêpe is having the mix not too thick as this will help it cook evenly and quickly.
½ cup plain or wholemeal flour
2 tbs sugar
pinch of cinnamon
pinch of salt
1 to 1¼ c milk
2 eggs
1 tbs oil or melted butter
Put flour, sugar, salt and cinnamon in a bowl. Whisk the eggs, oil and half of the milk into the flour mix. Continue adding the milk until you have very thin batter.
Heat the fry pan and spray with oil. Pour about half a cup of batter and quickly tilt the pan around so the batter coats it. After 30 seconds turn, let it colour and then remove. For the filling:
Two apples, peeled, cut into 2cm cubes
1 cup frozen berries
½ cup of orange, apple juice or water
¼ cup brown sugar
2 tbs custard powder
2 tbs water to mix into the custard powder
Put apples, juice or water, sugar and cinnamon in pot and bring to the boil.
Add half of the custard powder mixture, stir. Bring to the boil and add a little more of the custard mix to thicken. Fold in the berries. Leave to cool then put spoonfuls in the crêpes and tie up with string.
