The full Brazilian: delicious date and Brazil nut truffles

These truffles are the best! Medjool dates offer a rich caramel sweetness, and make this recipe super quick and easy to make. Brazil nuts are rich in selenium, a mineral of which many people don’t get enough. Selenium plays an important role in immune function and in the regulation of thyroid hormones. Two Brazil nuts a day are enough to make sure your selenium levels are optimal.
Makes: 15 truffles
Prep time: 10 minutes
Setting time: 10 minutes
15 medjool dates
½ cup dark chocolate chips (see notes below)
15 whole raw Brazil nuts
1 teaspoon flaky sea salt
1. Use a small sharp knife to cut a slit in the top of all the dates and remove the pits. Replace each pit with one Brazil nut, and then mould the date around the nut to cover.
2. Line a tray with non-stick paper.
3. Carefully melt the chocolate over a bain-marie, then dip each date in the chocolate, making sure they are fully covered. Place each chocolate-coated date on the lined tray, sprinkle with a little salt and leave to set.
⭐ This recipe will work with any kind of chocolate; we encourage you to use dark chocolate, free from unrefined sugars.
