Fruit & oat slice
Nutritionist Katie Harding of Nourished Beginnings shares her delicious recipe for moist fruit and oat slice, a perfect snack for the lunchbox.
DISH 12cm by 12cm (5cm deep)
Ingredients
1 cup of dried fruit (sultanas, cranberries etc)
500g apples, peeled and diced
2 cups rolled oats
1 cup wholemeal plain flour
1 cup desiccated coconut
½ tsp baking powder
2 bananas (mashed)
½ cup cups honey
150g unsalted butter, melted and cooled
1 tsp vanilla extract
Method
Preheat oven to 180 degrees celsius. Line tray with baking paper.
Place the dried fruit and diced apples in a saucepan and cover with water. Bring to the boil and simmer over a low heat for 10 minutes.
Place the oats, flour, coconut and baking powder into a bowl and mix to combine.
Drain the apples and place into a jug along with the banana, butter, vanilla and honey. Mix to combine.
Add the dry mixture to the apple mixture and stir to combine.
Divide mixture among baking trays, spreading evenly.
Bake for 40 min - 1 hour until golden on top and cooked through. Cool in the tray before slicing.
Make it dairy free by using coconut oil instead of butter.
