Ham Pickled Gherkin and Lettuce Wheels
These fun wheels are colourful and exciting compared to a bland ham sandwich. Hopefully, the fun novelty of eating wheels will be an interesting diversion for kids large and small. This recipe uses Swedish polar bread, if you can get hold of it, otherwise wheat tortilla wraps work just as well.
1 tbs cream cheese
2 tsp mayonnaise
6 sheets Swedish polar flatbread or wheat tortillas
6 slices honey roast ham
6 iceberg lettuce leaves, whole
3 pickled gherkins, finely sliced lengthways
150g grated mild Cheddar
Sea salt and ground black pepper
Cocktail sticks
Serves 6–8
In a small bowl, mix the cream cheese and mayonnaise together. Take a flatbread and spread over a small spoonful of the mayonnaise in a thin layer. Next, lie a lettuce leaf on top, followed by a slice of the ham. Place two to three slithers of gherkin along the middle and sprinkle over a large pinch of cheese. Lastly, grind over a little salt and pepper.
Starting from one side, slowly roll the flatbread and contents into a tight log, using a few cocktail sticks to keep it in shape. Cut off and discard either end to neaten it up, then cut the cylinder into four or five discs, rather like with a sushi roll, removing the cocktail sticks as you go.
Repeat with the remaining five flatbreads.
