Pumpkin, Prune and Orange Muffins
Healthy snacks for kids with hidden vegies! from Penny Roy, (Macraes-Dunback Branch of Rural Women New Zealand) as published in A Good Baking Day.
Ingredients:
3 cups flour
2 Tbs baking powder
pinch salt
1/2 cup caster sugar
1 cup chopped prunes
Grated rind of 2 oranges
1 cup orange juice
1 cup cooked mashed pumpkin
3 eggs
3/4 cup milk
100g butter, melted and cooled
Icing sugar to dust
Preheat oven to 200°C. Grease muffin tins well.
Mix together flour, baking powder, salt, sugar and prunes.
In a separate bowl mix together orange rind and juice, mashed pumpkin, eggs, milk and cooled melted butter. Mix dry and wet ingredients together.
Spoon into the tins. Bake for 15–20 minutes until the muffins are well risen and golden. Let cool for 5 minutes before removing from the tins. Dust with icing sugar to serve.
