Savoury cheese puffs
This is a tasty lunchtime treat that's perfect for picnics and trips to the beach.
Ingredients:
4-6 slices of medium-sliced white bread, crusts removed
Half an onion, chopped finely
3 eggs
I cup cheese
Method:
Get out your patty pan or small muffin tin.
Butter the bread on both sides and cut into quarters. Put one quarter in each of the patty pan holes and bake in the oven at 250deg C for 10-15 mins, or until golden.
Remove tray and allow to cool. (These casings can be made in advance and keep well in a cake tin.)
In the meantime, fry the onion in a little oil or butter until soft. Whisk the three eggs in a bowl and add the cheese. Then add to the cooled onion and put spoonfuls of this mixture in the casings. Put straight in the oven and cook for 10-15 minutes until golden.
